João A. Marques de Almeida has a 5-year degree in Animal Science from the University of Évora (1990), Master in Food Engineering from the Technical University of Lisbon (1994) and pHD in Agri-food Engineering from the University of Évora (2008). In terms of scientific and technical activity, it is Researcher of INIAV the National Institute for Agri-Food Research, and meat science and technology is their primary research area. He began his professional activity in 1990 as a fellow at LNETI, over the years developed activity in the areas of physics, chemistry, biochemistry and food microbiology, meat and meat products technology, influence of technology in the final food quality, thermal food processing, modelling of conservation processes and sensorial evaluation of food. In these areas has participated in several research projects and technological activities in food industry. In recent years has been involved in projects related to meat quality of Iberian pork, improvement of the quality of the Azores PGI beef. Is since 2012 in the National Animal Research Station (EZN Santarém), where is responsible for the laboratory of physical and sensorial characteristics of food, in which has been developing the tasks of the projects is mostly involved: evaluation of the quality of Iberian pork, quality of maturated cow beef, and more recently production of ruminants meat with high nutritional value. In above subjects there are several papers published in international scientific journals.
