I graduated in 1990 from London University and was awarded a PhD in Microbiology. Ever since, I have been conducting University research and am involved in teaching. My interests are focuseed on Food Preservation and Food Safety with particular emphasis and expertise in Novel Techniques of Preservation, including: Irradiation as a Decontamination – Steriliazation Technology, Active Packaging of Foods and Use of Novel/Natural Antimicrobials. I have mostly worked on fresh, chilled, frozen and Ready To Eat Foods, examining both the extension of the shelf life of these products, as well as monitoring the survival, growth and elimination of various pathogens in Foods and Foods Products, mostly of animal origin. The Quality and Safety of local Traditional Food Products are also currently areas of active research. Teaching of Microbiology, Food Microbiology/Food Safety and Food Quality Management to undergraduate students of Food Realted disciplines to both undergraduate and postgraduate students.
